Ingredients:
- 1.5c Spinach, chopped
- 1.5c Bell Peppers, diced
- 4 large Red Potatoes, diced
- Breakfast Sausage (as much as you desire)
- 8 Large Brown eggs, scrambled

- Paprika
- Garlic Powder
- Salt & Pepper

Instructions:
- Preheat oven to 400ᵒF
- Prepare your veggies
- Chop spinach
- Dice bell peppers
- Dice potatoes
- Add diced potatoes to a sheet pan. Coat the potatoes in olive oil, then season with salt, pepper, paprika and garlic powder. Then put in the oven for 30min, flipping half way through
- Heat olive oil in a large frying pan, medium heat then add Sausage
- Once the sausage has browned add in the bell peppers and cook until peppers become translucent
- Add in the spinach and roasted potatoes to the sausage and bell peppers
- Once spinach begins to wilt, add in the 8 Large Brown Eggs. Then season with Salt & Pepper
Notes: You can serve this with feta on top for extra flavor. If you want to freeze this to save for another time make sure you use an air tight container and this will last in the freezer up to 30 days.
