Honey Frosted Pumpkin Bars

Ingredients:

For the bars:                              For Honey Frosting:       

2c almond flour                       ½ c butter, softened

½ tsp salt                                   1/3 c honey

½ tsp baking soda                   ¼tsp cinnamon 

¼ tsp baking powder              1 ¼ coconut flour

2tsp pumpkin spice                 2 ½ tbsp coconut milk

¼ c almond butter                  1tbsp coconut sugar

2tbsp coconut oil

2tbsp honey

2tsp vanilla extract

2tbsp coconut milk

1c pumpkin puree

Instructions:

  • Preheat oven to 350˚F. Grease 8×8 baking dish with coconut oil

For the Bars:

  • Combine the bar dry ingredients in a small bowl
  • In a medium bowl add coconut oil & almond butter and microwave for 30 seconds. Stir well and add the rest of the wet ingredients
  • Combine the dry and wet ingredients, stir well
  • Pour into pan & bake for 35-40min
  • Let cool and put in the refrigerator for 1-2 hours

For the Honey Frosting:

  •  In a medium bowl beat the butter
  • Add in honey, cinnamon, coconut flour, coconut milk & coconut sugar. Beat until well combined
  • Once bars are cool, add the frosting and ENJOY
