
Ingredients:
¾ c Olive Oil ½ tsp Baking Powder
1/3c pumpkin puree 1tsp Pumpkin Spice
1c Brown Sugar ¼ tsp Salt
½ c Sugar 1 ½ c Chocolate Chips
1tsp Vanilla Extract
2c Flour
½ tsp Baking Soda
Instructions:
- Preheat oven to 375˚F
- In a large mixing bowl mix the: olive oil, pumpkin puree, brown sugar, sugar & vanilla extract. Beat until well blended
- Mix in the rest of the ingredients except for the chocolate chips. Be sure to not over mix
- Gently Fold in the chocolate chips
- Scoop out balls of cookie dough onto a sheet pant (I use parchment paper, not grease)
- Bake for 10-13 minutes
